Eggs, they're not just for breakfast anymore. I've recently converted (partially) to a paleo lifestyle. This means no grains, no dairy and no legumes. It also means a lot, I mean a lot, of eggs. But I've also noticed that eggs are being used in a whole host of recipes lately that really have nothing to do with eggs or breakfast. So I thought it would be cool to create a list of unique egg recipes. And no worries, bread and dairy are included in this list. Egg-and-bacon Pizza As if bacon and pizza wasn't a strong enough draw, might I tempt you with brie and mozzarella? They call it a breakfast pizza, but honestly it sounds so fantastic, I think it could be eaten anytime!
Sunny Side Up Burger Who doesn't love a good burger? Even better, top that burger with an egg and you've got a whole new experience for your taste buds to savor.
Scrambled Egg Pasta This recipe is great because it's perfect for leftover pasta. And since it uses eggs, it can be breakfast. Or not. All I know is eggs + pasta + cheese = heaven.
Healthier Huevos Rancheros This spicy traditional breakfast gets a makeover with kale and toasting rather than frying. Plus since it's spicy, it makes the perfect lunch or dinner too.
Roasted Vegetable and Goat Cheese Frittata I love goat cheese. It's a go-to item on any menu for me. Add in roasted veggies and this breakfast item just got served for dinner. Bam!
Grits and Asparagus with Poached Egg I'm a New Yorker. We don't do grits. But I'm aware that my Southern neighbors love this stuff. So, if you think grits are great, try this twist and add color and decadence. Then let me know what you think.
Smoked Tofu and Egg Fried Rice I don't love tofu, but this smoked recipe sounds delicious and might just convince me to give it another try. Plus, you get to make your own fried rice. Done.
Sweet Potato and Brussels Skillet I'm a big fan of brussels sprouts, when done correctly! And this dish is also prepared simply in one pot, another plus! Plus, it is super healthy and filling. Win-win!
Deviled eggs No list would be complete without this staple. And it's super easy to make! Simply hard boil a dozen eggs, then cut them in half lengthwise and remove the yokes. Mix all the yokes with enough mayo to make it smooth, then add a dash of mustard (maybe a teaspoon) and about a tablespoon of horseradish (or more if you like a kick!). Then fill the halved hard boiled egg whites with the yoke mixed and sprinkle paprika on top.
