Making the most of matzo

If you've read my Hanukkah post, you know I'm not the Jewish poster child. In fact, on the first night of Passover, rather than sitting with my family around the Seder table, I'll be seeing P!nk in concert. So if a large bolt of lightning should hit House Party in the coming days, you'll know why. However, despite my lacking in religious belief, I do love food and therefore want to aid those who will be forgoing bread for the next eight days. Funny enough, I have many friends of other faiths who swear they love matzo. And I confess to preferring egg matzo to plain. It's creamier and tastes better with just about anything. But whether you like it or you simply suffer the unleavened pain for the sake of being a good Jew, I've got my favorite toppings/recipes to help it taste a bit better.

Peanut butter and jelly on matzo: Again, best on egg matzo because the combo of the creamy peanut butter (I'd avoid crunchy as it could break the matzo when you try and spread it) and the jelly just make this a great anytime meal.

Grilled cheese on matzo: While you can't actually throw the matzo in the frying pan and make it the 'right' way, you can put some butter and cheese on it and put it in the toaster oven for a few minutes on bake. The result: a hot, melty, crispy delicious snack.

Pizza matzo: Like a pizza bagel, but on matzo. Take some marinara sauce, a few slices of mozzarella, or shredded mozz and bake in the toaster oven. It's super yum!

Matzo Brei: One of my favorite's growing up, though not the healthiest of meals, Matzo Brei is sort of like a frittata with matzo. Simply matzo, egg, butter and salt, it's easy to make and super filling. My Mom used to make it for dinner and it was considered a treat to forgo meatloaf or chicken. This is a dish you can make year-round.

Tuna with hummus: You can certainly put traditional tuna fish on matzo with mayonnaise, but I like switching things up and using hummus instead. Not only does it save calories and add protein and healthy fat, it just tastes better.

Nutella and marshmallow fluff: There's no rule that matzo can only be eaten as a main course. How about dessert? This decadent treat proffers the idea of a layer of Nutella and a layer of marshmallow fluff. For this one, I suggest plain matzo as the egg might add an additional flavor you don't want.

Chocolate covered matzo: Another dessert delight. This can be done with milk, white or dark chocolate and any combination of other items - nuts, caramel, peanut butter, etc.
