iHomework: A digital assignment calendar. With this app you can record your homework assignments, design your course schedule and calculate your grades. It's everything in one and will save money and paper.
iTunes U (free): This is a virtual app for your textbooks. If you have an iPad and you're always on the go, this app is for you.
gFlash + Flashcards (free): When I was in school, flashcards were my go-to way of studying and memorizing information. gFlash is another awesome way to save money and you can take it with you everywhere.

Livescribe wi-fi smartpen: Records hours of audio and notes. It's easy to bring to class and record those long lectures that you tend to zone out during (shhh, we won't tell).
iPad mini: It's light and small, but has every feature of the original iPad, except cheaper!
Epson all-in-one: Every student needs a printer. With this particular one you can print, copy, scan and fax.
